How can I switch from early bird to phase 1 or close sales for a particular ticket?

You can simply disable the early bird ticket and add a new ticket named Phase 1. You can disable a ticket, by clicking the tab Tickets>>Edit your ticket>>Enable the disable toggle>>Save
